How to Cook Authentic Bicol Express

Ang Bicol ay tanyag dahil sa bulkang Mayon na mayroon perpektong hugis ng apa. Dahil dito, nagi itong isang sikat na tourist spot sa ating bansa. Ngunit higit sa lahat, kilala ang Region 5 dahil sa kanilang pagkaing karaniwang may sakap na gata ng niyog at sili. Isa sa hinahanap hanap dito ay ang sarap ng anghang na dulot ng Bicol Express.

Ang Bicol Express ay isang pagkaing Pinoy na maanghang dahil sa puno ito ng sili. Dahil marami ang niyog sa Bicol at hindi mawawala ang sili sa bawat pagkaing Bicolano, ang dalawang ito ang pangunahing sangkap sa pagluto ng Bicol Express. Halina't pagpawisan sa masarap na food trip kasama ang Tripapips!

Galing ang Bicol Express sa "gulay na may lada" o ang ibig sabihin ay "gulay na may sili". Dahil halos sili lng ang sangkap at konting baboy ang unang Bicol Express na natikman namin, tinawag namin itong "ginulay na sili." Sobrang anghang pero habang kinakain namin ito ay lalo kaming nachachallenge ubusin at sa katunayan ay napapalakas ang kain namin. Ito daw kasi ang pagkain kung saan malalamn kung isa ka ngang "URAGON!" Hanggang naging isa ito sa paborito naming pagkain at inalam namin kung paano lutuin. Sa nalaman namin, masmasarap ang Bicol Express kapag lumabas na ang "mantika" ng baboy, gata at sili at masarap ihain habang mainit ang kanin! :)

Ingredients: 

  • 2.5 cups gata ng niyog
  • 2 lbs pork belly, hiwain sa maliliit na piraso
  • 1/2 cup alamang
  • 2 tbsp bawang, minced
  • siling mahaba o Serrano pepper
  • 1 pc sibuyas, minced
  • asin at paminta

Cooking Procedure:

  1. Sa isang kawali, pakuluan ang karneng baboy hanggang lumambot.
  2. Kapag ito ay malambot na, ilagay ang gata ng niyog.
  3. Sunod na ilagay ang sibuyas at bawang.
  4. Patuloy na lutuin hanggang ang gata ay magmantika.
  5. Idagdag ang alamang at haluin.
  6. Timplahan ng asin at paminta.
  7. Ilagay ang sili at haluin.
  8. Ihain!
Ayan, ready na ang Bicol Express! Ihain na at simulan na ang Food Trip! Ang dami ng sili ay depende sa anghang na gusto ng kakain nito, ngunit ang authentic Bicol Express ay kadalasang puno ng sili at nilalagyan pa ito ng siling labuyo. Sa ngayon, marami ang iba't ibang paraan ng pagluto ng Bicol Express. Maaaring lagyan ng pinya para mabalanse ang alat at anghang nito.

Yung natikman kong Bicol Expess sa Naga City, mostly alamang and sili ang sangkap, kaunting kaunti lang yung baboy :)

Yup, kadalasan sili lang ang laman at konting taba ng baboy tapos sobrang nagmamantika dahil sa gata at taba. hehehe. Pagnakaluwag luwag na sa buhay, madami na rin ang halong baboy. Hehe.

I never knew that pork belly must be the meat used in Bicol Express, this is noted. I may try using your recipe one of these days.

Oh. Bicol Express is one of our most favorite Filipino dishes but we cook and eat the vegetarian version using gluten and tofu. I have never tried it with pork belly and meat.

Bicol Express is like a challenge for me as a foodie who loves to explore every flavor of food. I've eaten once and it was sooo spicy! But you know what, I wanna try it again! :D

I have never tried cooking this dish, for one I'm afraid of working with siling labuyo. So I opted to try it elsewhere. When we went to Albay it was at the top of our list to eat authentic Bicol Express.

I love Bicol Express! :D My dad lived in Bicol for a while so my mom tries to make him and the whole family some Bicol Express when she can. I used to not like spicy foods a lot, but Bicol Express has always been an exception! ;)
